I have fallen in love with making little meal pockets. I take pie crust, divide it into fourths and fill it with yummies.
Right now my two favorites are pizza pockets and sweet-bean piroshki.
The pizza pockets are super easy. I just fill each pie crust quarter with spaghetti sauce (since I have it at home all the time), pepperoni and cheese! You can also add black olives and other favorite pizza toppings. Sneaking spinach in there would also be a good idea. My spaghetti sauce usually already has spinach in it.
The Piroshki takes a little more work. You take a large baking potato - peeled, cubed, boiled and mashed. Separately you mash kidney beans from a can (15 ounce or so). Combine the mashed potato with 3 tablespoons of butter, some dill, pepper and salt, and then add the mashed kidney beans. Then you just put around 2 tablespoons of this mixture into each quartered pie crust.
To get the pretty, golden color on top you take 1 egg and add 1 tablespoon of water. Mix and brush on top of the sealed pockets.
I am thinking of making chili pockets soon! Mmmmm.... any other ideas of what you can fill these pie crusts with?
