(I am late - I was cleaning yesterday) She has some fabulous recipes you may want to add to your Thanksgiving dinner! So, let's get started with her Baked Sweet Potatoes and Apple recipe! Baked Sweet Potatoes and Apples
2-3 Sweet Potatoes
2-3 Granny Smith Apples
1/2 cup Apple Cider or Juice
1/4 cup packed Brown Sugar
3/4 teaspoon Cinnamon
1/4 teaspoon Ginger Powder
1/2 teaspoon Nutmeg
1/4 teaspoon Salt
1 tablespoon melted Butter
Peel sweet potatoes and cut into 1/4-1/2 inch thick slices
Core apples and cut into 1/2 inch thick slices
Toss all ingredients together in a large bowl and then transfer into a (glass) baking dish.
I try to arrange and alternate the slices to make it look pretty!
Cover with foil and bake @ 350 degrees for 40-50 mins or until tender.
You can drain off any remaining juices and serve.
I love the taste and smell of this dish. It's easy to make and you really can't mess it up. I've even made it with orange juice instead of apple and it was just as yummy.
